Sheer Khurma - a Vermicelli Pudding

            Sheer Khorma
Sheer Khurma or Sheer Khorma is a vermicelli pudding prepared by Muslims on Eid ul-Fitr and Eid al-Al-Adha in India, Pakistan and Bangladesh. Sheer Khurma is similar in the lines of preparation of Vermicelli Kheer but only extra ingredient 'dates' is added here. The dates are boiled in the milk to give it an added authentic taste to the Sheer Khurma. And during the fasting days of Ramadan, Sheer Khurma with dates are prepared as dates are an excellent source of fiber, sugar, magnesium, and have carbohydrates, which will aid the body in maintaining health.

The literal meaning of Sheer Khurma is 'sheer' meaning milk and 'Khurma' meaning dates. The dates used in the recipe are the dried dates. The main ingredients used in Sheer Khurma are vermicelli, whole milk, sugar, dates. To make the process fast in thickening the milk, condensed milk can be added to make the Sheer Khurma rich though traditionally whole milk is thickened by stirring in continuously. 

Vermicelli are fried in clarified butter. Then milk (sheer) is added and the vermicelli are allowed to cook further. As the mixture thickens, sugar and dates (Khurma) are added along with any other dried fruits.



Ingredients:

750 ml whole milk
150 gram of condensed milk
1 cup of thin version of roasted vermicelli 
4 to 5 dates 
1/2 cup of assorted nuts (almonds cashew melon seeds)
sugar - 1/4 cup
2 to 3 cardamom powder
2 tbsp ghee / clarified butter

Cooking Method:

1. Soak the nuts in warm water until the skin can be removed easily. Alternatively soak the dates in the warm water and slice it thin. Keep all this aside.

2. Bring the milk and dates to boil keeping it on low flame until it gets half. Alternatively heat 1 tbsp of ghee and fry the assorted nuts to golden brown keeping it aside. 

3. In the same pan, heat the remaining ghee and roast the vermicelli under low flame, for about 3 to 4 minutes, just to take away the roasted smell in the vermicelli. 

4. Combine the milk and roasted vermicelli and bring it to boil. After 5 to 7 minutes in low flame add sugar and allow it to dissolve. Now pour the condensed milk and give it a stir. Add cardamom powder. 

5. Garnish the Sheer Khurma with the roasted nuts and the dessert is ready to be served warm or chilled.
